- Maritime Madness Sweet Chipotle Rub
- Maritime Madness Super BBQ Grilling Sauce
- Lumberjack Competition Blend BBQ Pellets
Instructions:
Phase 1 — Structure
- 225°F + Super Smoke ON
- 3 hours
- Unwrapped
Phase 2 — Tenderization
- Increase smoker to 250°F
- Turn Super Smoke OFF
- Stay unwrapped
Cook until:
- Probe slides in with slight resistance
- Internal feel ≈ 195–200°F
Usually another 45–75 minutes
GLAZE — MARITIME MADNESS
- 3 tbsp Super Sauce
- 4 tbsp Melted Butter
- GLAZE TIMING
- Apply only to the unwrapped rack
Last 10–15 minutes
- No foil
- Let sauce tack
- Do not let it boil
- Sauce should finish ribs, not save them.
